I could hear a noise from in the basement one night and upon going downstairs I found my dog doing this!

I wonder if there’s something in the plaster, a few dogs do this on Dog Shaming, It’s strange because your dog did it right in the middle of the wall. Well add Bitter Apple to the paint next time.
You may be on to something – My dog has left the walls alone, but he loves to eat spackle. If I patch a hole I have to keep him away until it is dried an painted or he will lick the spackle out.
This implies that he doesn’t like to eat paint, but we make him vomit the piece of paint roller he ate (with wet paint on it), so it is only dry paint that he doesn’t enjoy.
